Before I share the recipe, I should say one thing that makes all of our cheesey casserole dishes extra delicious is we always use fresh blocks of cheese and shred them ourselves with my favorite kitchen gadget EVER. While bags of shredded cheese are convenient, they’re also more expensive (and they contain additives to prevent the cheese from clumping).
This homemade macaroni and cheese recipe was inspired by this recipe for Southern Macaroni and Cheese.
The Best Kid-Approved Homemade Macaroni and Cheese
Ingredients
1 pound elbow macaroni noodles
2 cups milk
2 large eggs
1 stick butter, melted
2 8-oz. blocks Sharp Cheddar Cheese, shredded (approximately 4 cups)
1 8-oz. block Colby Jack Cheese, shredded (approximately 2 cups)
Instructions
First, preheat oven to 350 degrees.
Next, bring a large pot of salted water to boil and cook elbow macaroni noodles according to package directions. Then transfer noodles to a colander and rinse under cold water to stop cooking. Set aside.
Next, in a large bowl, whisk together milk and eggs. Then add cooked macaroni noodles, half of the shredded Sharp Cheddar Cheese (approximately 2 cups), melted butter, 1 1/2 teaspoons salt and 1/2 teaspoon pepper and stir until well combined.

Next, add half the macaroni mixture into a 9 x 13-inch baking pan. Then sprinkle Colby Jack cheese evenly on top. Evenly spread the rest of the macaroni mixture on top, and cover with aluminum foil.

Next, remove from oven, discard aluminum foil and add the remaining shredded Sharp Cheddar Cheese (approximately 2 cups) on top.
